Reminiscing about potatoes
This is one of my all-time favorite recipes as a kid, and it take me all the way back to the days when my grandmother would babysit me. Those were the good old days, and I remember fondly the time I would spend just one-on-one with my Bunia. She’s from Ukraine, so she would speak to me in Ukrainian and cook me traditional Ukrainian dishes. One of those are these potato pancakes–or “pliatsky z barabolia” as we would call them. They’re made simply, with just grated potato, egg, onion, flour, and salt. You can easily whip them up for a weekend brunch or quick lunch. Top them with a few dollops of sour cream, and you’re good to go. Smachnoho!

Ukrainian potato pancakes
ingredients
3 large potatoes
1-2 eggs, lightly beaten
1 tablespoon grated onion
2 tablespoons flour
½ teaspoon salt
A few turns of freshly ground black pepper

instructions
Pare, wash, and grate the potatoes on a fine grater. Pour off some of the potato water. Add all the ingredients and mix them thoroughly.
Drop the mixture from a spoon in small rounds about the size of small pancakes onto a hot, well-greased frying pan or griddle.
Bake over a moderate heat about 5 minutes on each side, or until well-browned and tender.
Serve with sour cream.
