I always want to like holiday cocktails, but the truth is they’re usually just too sweet for me. I can only really stomach cocktails if they’re very low on the sweetness and have a nice citrus or herbal flavor. I really love a good mule, with it’s fresh and gingery flavor, and it’s such a great drink to give a holiday twist. Adding a splash of pomegranate gives it a tart flavor and a pretty red color, perfect for a holiday quaff or punch bowl. Garnish it with some fresh pomegranate arils and thyme for the ultimate presentation.

ingredients

4 ounces vodka

2 ounces fresh lime juice

2 ounces pomegranate juice

Ice 

1 bottle of ginger beer

Pomegranate arils

Fresh thyme

Prep time

5 minutes

Cook time 

5 minutes

10 minutes

Makes 2 mules

instructions

Place vodka, lime juice, and pomegranate juice in a small pitcher filled halfway with ice, and stir vigorously until combined. 

Strain the mixture evenly into two chilled mule mugs filled partially with ice. Fill each drink the rest of the way with the ginger beer, and give them another gentle stir.

Garnish mules with some pomegranate arils and fresh thyme.

  • The key to a really great mule is making sure you have really good ginger beer. You don’t want anything that’s going to be too sweet, and you definitely don’t want to use ginger ale. The greater the ginger flavor, the better!
  • Make this big batch! Triple this recipe, and place all ingredients in a large pitcher filled about ¾ of the way with ice. Give it a few stirs before serving

⟶ modifications

  • To make this less alcoholic, remove the campari and vermouth, and double the amounts of cranberry juice and lime juice. Adjust the sweetness and potency by adding more or less sparkling water
