brown sugar, spice, and everything nice

These buttery, sweet cookies are perfect for the eve before Halloween. The great thing about this cookie is how simple it is. Nothing crazy, easy and accessible ingredients, and a light mapley glaze to top them off. The maple syrup and the warming spices are definitely the highlight of this cookie, and they use just enough butter to gently melt in your mouth.

ingredients

1 ½ sticks of unsalted butter, softened

1 cup brown sugar

2 teaspoons vanilla extract

1 large egg

2 tablespoons maple syrup

2 ½ cups all-purpose flour

1 ½ teaspoons baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

1 teaspoon Kosher salt

For the icing

3 tablespoons unsalted butter

¼ cup maple syrup

1 ½-2 cups powdered sugar

¼ teaspoon cinnamon

instructions

Preheat oven to 350 degrees Fahrenheit. Line two large baking sheets with parchment paper. 

In a large mixing bowl, beat the butter, brown sugar, and vanilla extract until light and fluffy, about 5 minutes. Add the egg and maple syrup, and beat until combined. 

Gradually, add in the flour, and beat until combined. Add in the baking soda, cinnamon, nutmeg, and salt until combined. 

Roll cookie dough into smooth balls, and place 2 inches apart on the baking sheets. Bake for 10-12 minutes, until cookies are set and golden. Transfer to a cooling rack. 

While cookies are baking, melt the butter and maple syrup together in a small saucepan. Whisk in the powdered sugar and cinnamon until smooth. 

Once cookies have cooled, drizzle or brush the icing over top, and let icing set before serving.

⟶ modifications

  • You can substitute the flour for gluten-free all-purpose flour as well, and they should turn out the same if not a little more crumbly
