Happy St. Patrick’s Day! To celebrate some Irish food culture this weekend, you must try these delicious egg cups, complete with Irish bangers and Dubliner cheese. These are absolutely delicious to make year round as well, and they’re super quick and easy for a weekend morning. All you need are a few key ingredients, ramekins, and about 20 minutes of your time!

Yes, a banger is an amazing song that you can’t get out of your head and just really gets a party going every time it comes on. But “bangers” is also the word for British and Irish sausages, and you’re bound to see them on many a breakfast menu on that part of the map. They’re made up of ground pork combined with various spices and herbs, making them super flavorful and just a touch spicy. 

You can usually find Irish bangers at the grocery store (I don’t shop there, but I’ve heard Trader Joe’s has them?), so definitely try to get the real thing when you’re making this recipe! Of course, other types of sausage will work perfectly fine as well. 

how to make Irish egg cups

As I mentioned, these are super easy and only require a few ingredients. Instead of using the stove for these eggs, you’re going to bake them in the oven, so you’ll start by preheating the oven to 350 degrees and greasing 4 ramekins with butter or oil. 

Then, if your bangers are uncooked, you’re going to cook them in a skillet on the stove, turning them occasionally until browned and cooked through. Allow them to cool for a bit, and then carefully chop them into small chunks. 

Now you’re going to build your ramekins! Divide the bangers, cherry tomatoes, and cheese evenly among the 4 ramekins. Then, you’re going to crack an egg into each one, being careful not to get any shell in there! My advice would be definitely don’t crack the egg on the edge of the ramekin, but crack them on a smooth, flat surface with one swift hit. 

Finally you’re going to fill each ramekin nearly to the top with heavy cream, and top with salt and pepper. There’s no mixing required, as you don’t want the yolks to break and disperse in the cups. 

After baking for about 12 minutes, the egg whites should be totally set with the yolks still runny. Serve with some crusty bread or homemade Irish soda bread

1 tablespoon unsalted butter

4 Irish bangers (breakfast sausage links)

½ cup cherry tomatoes

2 ounces Dubliner cheese, grated

½ cup heavy cream

4 large eggs

Preheat oven to 350 degrees Fahrenheit. Grease 4 ramekins with butter or oil and set aside.

Heat some olive oil over medium heat in a large skillet, and add the bangers. Heat bangers, turning occasionally until browned and heated through, about 5 minutes. Remove from skillet and cool for a few minutes. Once cooled, chop bangers into small chunks. 

Divide the bangers, cherry tomatoes, and cheese among the ramekins. Crack an egg into each ramekin and top each with an equal amount of cream. Top with a pinch of salt and pepper. 

Bake eggs in preheated oven until egg whites are set, about 12 minutes. Serve immediately.
