feeling blue all summer long

We’re past the midway point of summer, and I’m still slinging blueberry recipes at you. These muffins may not seem like anything special (don’t they always have blueberry muffins at the coffee shop down the street?), but I promise, this recipe will change your weekend mornings. Unlike your favorite coffeeshop treats, these muffins are actually not super unhealthy and the fresh berries in each bite are to die for. Some ingredients that make these muffins “healthy”: Greek yogurt and olive oil instead of butter, a mix of white and whole wheat flour, only half a cup of brown sugar with cinnamon and vanilla to round out the sweetness. These muffins end up being so mouthwateringly delicious, you won’t even miss the crumble on top.

ingredients

1 cup whole wheat flour

½ cup white flour

½ teaspoon ground cinnamon

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 cup plain Greek yogurt

¼ cup olive oil

2 large eggs

½ cup brown sugar

2 teaspoons vanilla extract

1-2 cups blueberries

Makes 12 muffins

instructions

Preheat oven to 400 degrees Fahrenheit. Grease a 12-cup muffin tin and set aside. 

In a medium bowl, stir together the flours, cinnamon, baking powder, baking soda, and salt. 

In a separate bowl, whisk together the yogurt, olive oil, and eggs. Stir in the sugar and vanilla extract. 

Stir the dry ingredients into the bowl of wet ingredients, and stir until just combined. Fold in the blueberries. 

Spoon the batter into the muffin cups. Bake muffins for 15-17 minutes or until the muffins are baked through and golden on top.

  • A mix of white and whole wheat flour make these muffins heartier and somewhat healthier than the traditional muffin
  • Similarly, Greek yogurt and olive oil are great substitutions for butter. Many muffin recipes call for at least a stick of butter, and for what? The yogurt and oil give these muffins the moistness that you crave without the unhealthy fats

⟶ modifications

  • While I love blueberries, feel free to use a different type of berry in these muffins. I’m a huge fan of strawberries and blackberries in the summer as well

⟶ store it

  • Store these muffins in a Tupperware at room temperature for up to 3 days. After that, you can refrigerate for another 2 or freeze for up to a month
