Oatmeal is one of those dishes where you can spend 2 minutes heating up some oats and milk and call it a day, but if you spend just a few moments of extra time on it, you can elevate it to a restaurant-worthy breakfast dish. So that’s why, when I’m craving oatmeal for breakfast, I reach for a saucepan.

I know it’s tempting to rush the oatmeal process, but if you just spend a little extra time on it, stovetop oats can be such a treat. And by a little extra time, I REALLY mean just a little. All you need is a small saucepan and your ingredients.
I love to add all the ingredients at once so they really meld together. Especially the blueberries! They get warm and jammy in the oatmeal, releasing their inner sweetness. Honestly, the blueberries on their own are sweet enough that you don’t even really need the brown sugar if you don’t want it.
Once you’re oatmeal is a nice thick consistency, you can remove it from the heat and add the toppings of your choice! Also, if you prefer a thinner consistency, you can always add some additional milk or water. And then more time on the heat will thicken it up.
What I love about oatmeal for breakfast is that you can top it with whatever your heart desires. For this recipe, I like to add some additional fresh banana slices, blueberries, and some roasted pepitas for a little crunch!

blueberry banana oatmeal
ingredients
1 cup dry rolled oats
½ cup skim milk (or non-dairy milk)
1 banana, thinly sliced
½ cup fresh blueberries
½ teaspoon cinnamon
½ teaspoon vanilla extract
1 teaspoon brown sugar
Handful of unsalted, roasted pepitas

Combine oats, milk, half of the banana slices and half of the fresh blueberries in a medium saucepan over medium-low heat.
Allow the oatmeal to heat up, and stir in the cinnamon, vanilla, and brown sugar. Once the oatmeal begins to bubble, stir constantly until oatmeal is at the desired consistency. Add a pinch of salt.
If the oatmeal becomes too thick, just add a splash more of milk or water to thin it out.
Remove from heat, and spoon the oatmeal into two bowls. Top with remaining sliced banana, blueberries, and pepitas.
