When I look at the forecast in the morning and it’s shaping up to be another hot day with temperatures reaching well into the nineties, the only thing I want to put in my body is something cold. Make it fruity and filling, and you’re looking at a grade A breakfast. And there’s nothing like an ice-cold fruit smoothie to cool you down, boost your brainpower, and fuel you with energy. 

This coconut and avocado smoothie is subtly sweet with the latter giving it a dreamy, creamy consistency. Trust me, this is NOT like eating liquid guac as you might be wondering. When mixed with frozen fruit, coconut flakes, and a touch of honey, you won’t believe how easy it is to incorporate avo into something other than your toast and chip dip.

I truly think a good blender is an absolute kitchen staple. Yes, they can take up extra space when you’re running a small kitchen, but if you want to make quick blended recipes like smoothies, soups, and sauces, you’ll definitely need one that works well.

If you haven’t taken the plunge into blender ownership or are still working with your parents’ clunky hand-me-down blender from the 1980s, here are a few options you might want to consider:

Vitamix Explorian The Vitamix has long been considered the creme de la creme of blenders, and for good reason. With 10 different speed settings, high durability, and a top quality motor, this gadget will produce your perfectly blended smoothies, soups, and sauces. The catch? It’s quite pricey and a little bulky for your small city apartment with limited counter space. However, it may be just the item for your wedding registry or to celebrate buying a house for the first time.

KitchenAid Variable Speed KitchenAid is another one of those tried and true brands that you really can’t go wrong with. This particular model has multiple speed settings and is good for blending tough ingredients like ice, nuts, and frozen fruit. It even has a self-cleaning setting! It’s still not your most affordable blender, but it’ll last you years and comes in a number of fun colors. 

Ninja Professional Plus An upgrade from the original Ninja blender, this make is powerful, easy to use, and won’t break the bank (yay!). The machine doesn’t feature as many speed settings as the aforementioned blender, but the Ninja Plus has presets for smoothies, ice crush, and ice cream, which makes it uncomplicated especially for novice blend-masters.  

Nutribullet I can personally vouch for the Nutribullet as a top-notch single serving blender. Its sleek design makes it an attractive addition to your kitchen counter, while its compactness makes it easy to store as well. Although this blender doesn’t tout multiple speed settings, it does the job just fine whether you’re blending smoothies or crushing ice. At well under $100 it’s an absolute steal!

While there are many, many more options in the blendersphere, I recommend doing some research before biting the bullet (no pun intended). While a blender isn’t necessarily the cheapest or most used of kitchen appliances, you’ll definitely want a good one that will last you a long time—though maybe not as long as your parents’ clunker 😉

And hey, you’ll save money in the long run by making your own smoothies instead of shelling out $10 after those AM workouts.

The list of ingredients for this yummy breakfast smoothie is short and sweet. 

Avocado You can use frozen or ripe

Coconut milk This is one of my favorite non-dairy milks to use in smoothies, because of the subtle hint of coconut flavor

Frozen pineapple I always add something from the freezer to my smoothies to give it that nice frozen consistency, but you can substitute crushed ice as well

Unsweetened coconut flakes I always have a bag of this in my pantry to add to smoothies (or oatmeal or yogurt or other stuff!)

Honey You can absolutely forego the honey, but it aids in adding a little natural sweetness to your smoothie

Once you have all the ingredients ready, just make sure you have good blender to transform them into your smoothie.

ingredients

1 avocado

1 ½ cups coconut milk

⅓ cup frozen pineapple chunks

¼ cup unsweetened coconut flakes

1 tablespoon honey

Prep time

Makes 2 smoothies

instructions

Add all ingredients to a blender, and blend until smooth. Add more coconut milk as needed until you’ve reached the desired consistency. 

Pour smoothie into two highball glasses or mason jars and garnish with additional shredded coconut.

  • I mentioned earlier that you can use frozen or ripe avocado. I don’t buy bags of frozen avocado (I don’t even know if they sell that?), but sometimes I’ll crack into a fresh avocado, and I just can’t eat the whole thing! Instead of trying to refrigerate the other half and risking the nasty brown film that forms on an avocado, I’ll scoop it from the skin, wrap it tightly, and freeze it until I’m ready for my smoothie

⟶ modifications

  • There are many different ways you can modify a smoothie. For example, including coconut milk isn’t necessary. You just need some kind of liquid (another plant-based milk, dairy milk, water, etc)
  • As I mentioned earlier, you can also sub a different frozen item for the pineapple. I chose frozen pineapple, because it doesn’t overshadow the flavor of the avocado and coconut, but you can also opt for frozen mango, banana, strawberries, or just plain ice

⟶ store it

  • If you make too much smoothie or can’t finish it all, not to worry! The best way to store leftover smoothie is to freeze it. Then, when you’re ready for more, you can either let it defrost a bit or have it as a frozen treat on another hot summer’s day
