honey, honey
This Ukrainian honey cake, or medivnyk, is one of my grandmother’s recipes, and is one of my all-time favorites. Augmented with cozy spices like cinnamon and cloves, as well as walnuts for a little crunch, this is a great little sweet to serve around the holidays (or just because). Enjoy it in the morning with a cup of coffee or the afternoon and evening with a cup of tea.

medivnyk (Ukrainian honey cake)
ingredients
6 eggs, separated
1 ⅓ cup sugar
1 ⅓ cup honey
½ teaspoon cinnamon
¼ teaspoon cloves
2 teaspoons baking soda
½ cup vegetable oil
½ cup cold coffee
3 cups flour
½ cup walnuts (optional)

Makes 1 loaf
instructions
Preheat oven to 315 degrees Fahrenheit. In a large bowl, beat egg yolks and sugar. Add honey, and continue beating until thoroughly combined.
Mix in the cinnamon, cloves, and baking soda. Asd the oil, coffee, and flour. Mix until combined.
In a separate bowl, beat egg whites to stiff peaks. Gently fold it into the rest of the batter, and mix until just combined.
Optionally, coat nuts with a bit of flour, and stir them into the batter.
Fill a greased loaf pan only half of the way with batter, discarding any leftover batter or adding it to another smaller pan.
Bake for an hour and a half, until an inserted knife comes out clean.
