Mini chip chocolate chip cookies

I’ve really never been the type of person to get frequent cravings, and when I do it’s usually something savory. Like pasta! But when I am craving something sugary, my sweet tooth is almost always calling for chocolate. 

Chocolate chip cookies are one of those tried and true desserts that, when homemade with a reliable recipe, you really can’t screw up. As long as you have some chocolate chips and some staple baking ingredients on hand, your chocolate cravings shall be fulfilled!

Why mini?

My mini-chip recipe was born out of one of those rare cravings I had for something sweet and chocolate-y. Because I was alone and didn’t want to make a big batch of full-sized cookies, I decided to make a small batch of bite-sized cookies! And I just so happened to have mini chocolate chips in the pantry and thought it would be the cutest thing to make a mini batch of mini mini-chip cookies. So, there!

What makes the perfect cookie

If you’re a baker, I’m sure you know that there are a ton of different cookie recipes out there. What I’ve found is that the perfect cookie really comes from a combo of these ingredients:

The dry ingredients These include all-purpose flour, baking soda, baking powder, and sugar (I used half white and half brown sugar)

The wet ingredients For these, you’ll need unsalted butter (softened, but not melted), an egg, and vanilla extract

The extras And for the fun stuff, you just need a bunch of chocolate chips and a little sea salt

If you use that formula for the wet and dry ingredients, you can really customize your cookies to have whatever extras you’d like. Instead of chocolate chip, for example, you can add raisins and walnuts. You can add cinnamon and butterscotch bits. Or you can add a spoonful of peanut butter (add PB along with the chocolate if you want pure heaven).

Mini chip chocolate chip cookies

ingredients

1 ¼ cups flour

½ teaspoon baking soda

½ teaspoon baking powder

½ cup granulated sugar

½ cup brown sugar

1 stick unsalted butter, softened

1 large egg

1 teaspoon vanilla extract

½ cup mini semi-sweet chocolate chips

Coarse sea salt for sprinkling

10 minutes

Cook time 

10 minutes

Total time

20 minutes

Makes 12-15 mini cookies

instructions

Preheat oven to 350 degrees, and prepare a baking sheet by lining it with parchment paper.  

In a large bowl, beat together the sugars and butter with an electric hand mixer. Add the egg and vanilla extract, and beat until just combined.

Add in the baking powder and baking soda, and gradually mix in the flour, 1 cup at a time. Mix everything well, until completely combined. Stir in the chocolate chips.

Transfer 1-2 tablespoon-size balls of dough to the prepared baking sheet, and press in a few additional chocolate chips on the top of each dough ball and sprinkle with coarse sea salt. Bake for 8-10 minutes. Remove from oven and transfer cookies to a cooling rack for a few minutes before serving/eating.

  • Make sure not to over-bake these little guys! The time these are in the oven may vary depending on your oven, so I would start with 7 or 8 minutes and then do a minute or two more if they don’t look done

⟶ modifications

  • As I previously mentioned, you can customize the extras to make a variety of different cookies! 
  • I know I went really crazy on the whole “mini” theme here, but you can make these regular sized cookies as well! Just double the recipe to make a full batch of medium cookies, and feel free to use regular chocolate chips if you don’t have the minis. Just note that if you’re cookies are larger, you might have to bake for a few minutes longer
