Are you ever just craving an afternoon pick-me-up? These coconut tahini bites are the perfect healthyish sweet snack. They’re super easy to make, just requiring a few key ingredients, plus they can be modified a ton of different ways to still result in a satisfying energy boost mid-day.
making coconut tahini bites
All you need to make these delicious snack bites is a large mixing bowl, your ingredients, and a couple of ice cube trays. I would recommend using a silicone tray, as it’s much easier to pop out the bites after freezing, plus they’re easier to clean afterward.
The key ingredient in this recipe is tahini. Tahini is a butter-like substance made from toasted sesame seeds. It usually separates in the jar, so make sure to stir it up well before adding to the bowl.
Next, you’ll need melted coconut oil, unsweetened shredded coconut, and maple syrup. Make sure to use pure maple syrup, as its a healthier alternative to other sweeteners, high in antioxidants and packed with essential nutrients.
Finally, a bit of ground cinnamon and vanilla helps round out the flavor of these tahini bites. Because all of these ingredients are smooth and easy to mix up, you should only need a large spoon to stir everything together versus a food processor or mixer. It makes the process simple and cleanup minimal!
Once the ingredients are all mixed up together, just pour it into the ice cube trays and freeze for at least one hour. Once they’re completely solid, pop them out of the tray, and they’re ready to eat! You can always dust them with some additional coconut flakes, cocoa powder, or cinnamon for a little extra something.
