It’s almost Game Day (as in Super Bowl Sunday), and although I’m not an avid American football fan, I do always quite enjoy the get-together that accompanies that particular sporting event. 

It’s usually at a friend’s apartment where the snacks are plentiful and the company is so good I tend to chitchat through the entire game, taking breaks for commercials and the halftime show. 

So, as someone who’s usually kind of blasé about the game itself, one of my favorite things to do pre-SBS is plan out what snack or appetizer I’m going to contribute to the potluck. 

These chipotle cheddar biscuits make an incredible appetizer for any even, but if you’re trying to figure out something easy and crowd-pleasing to make for this weekend, these are it! They’re super easy to make and can easily be done the day of the even with minimal prep time.

what's the stuff?

I know I love to go around touting my healthy-ish recipes, but I’m not going to pretend these biscuits are ‘healthy’ per se. They’re not super bad for you, but they are basically just butter, cheese, and flour. But that’s the point of Super Bowl, right? Allowing ourselves to indulge while we pretend to be interested in the world’s most boring sport (don’t tell anyone I said that). 

Anywayyyy, this recipe is truly that simple. You’ll need a stick of butter, some really great aged cheddar cheese, flour, salt, and chipotle seasoning. Now, you can always skip the chipotle, but I love how this seasoning gives these biscuits a touch of heat and smokiness. It makes them feel special and slightly gourmet even though they’re really so easy to make. 

Once you have your ingredients and are really to make these babies, you just combine all the goods in a large mixing bowl and beat then until combined. Probably the most crucial step is then rolling the dough into a log and refrigerating it for at least and hour until it’s solid and easy to cut through. 

Here’s the step where you can kind of decide for yourself what shape you want these biscuits to be in. You can make the log evenly circular so the biscuits turn out round (as I’ve done), or you can make it more of a square or rectangular shape. Just make sure the log is the same width all the way through, so the biscuits bake evenly. 

After you slice the biscuit dough, you just place them on a cookie sheet and bake until they’re golden and fully baked. Then, cool them, sprinkle with sea salt, and you have yourself a Super Bowl dish! I hope you and all your fellow football (commercial/halftime show) friends love this dish. Enjoy!

ingredients

1 stick unsalted butter at room temperature

1 1/4 cup grated white cheddar

1 cup all-purpose flour

½ teaspoon chipotle seasoning

Pinch of salt

Prep time

1 hour 15 minutes

Cook time 

15 minutes

Total time

1 hour 30 minutes

Makes 24 biscuits

instructions

Place the butter, cheddar, flour, chipotle seasoning, and salt in a large bowl. Add about a tablespoon of water (or more if needed). Beat ingredients with an electric mixer on low speed until well-combined. The mixture will be clumpy which is okay, but it should also be pretty doughy. 

On a lightly floured surface, roll the dough into a 12-inch log. Wrap tightly in plastic and refrigerate for at least one hour. When ready to bake, preheat the oven to 350 degrees Fahrenheit. 

Line a baking sheet with parchment paper. Slice the dough into about 24 rounds, ½ inch thick. Place the rounds on the parchment paper and bake for 15 minutes or until golden brown and baked through. 

Cool biscuits on a baking rack, sprinkle with some sea salt, and serve either warm or at room temperature.

  • This recipe was adapted from Bon Appetit
  • The Bon Appetit recipe uses yellow cheddar which is why the color looks so different. You can also do that, but I just overall prefer white cheddar

  • If you want to make the dough ahead, you can refrigerate it for 3 days or freeze it up to four months
  • Store cooked biscuits in the fridge for up to one week
